Happy Washington's Birthday!

Today is the day that the US celebrates the birth date of the man consider to be the father of the country, George Washington. It is not the actual date of Washington's birth; the holiday was moved to the third Monday in February to give government workers a three day holiday; many financial institutions also get a three day holiday while ordinary workers still have to report for work. Personally, considering the contributions by George Washington to the founding of the United States of America, this should be a holiday for all citizens.

I remember coming home from college on Washington's Birthday to find Mum removing a chocolate cake from the oven. It was not just a chocolate cake but one in which she had added a tin of cherry pie filling. She told me that since it was Washington's Birthday she decided to bake a chocolate cherry cake to celebrate. It was a very yummy cake.

To make this yummy chocolate cherry cake just use a packaged cake mix following the directions on the box. Once you have the batter mixed, just add one tin of cherry pie filling that you have checked for pits; tinned cherry pie filling can contain cherry pits so it is important to check for pits before adding the filling to the batter. Bake as directed on the package and enjoy.
